From our olives

Extra Virgin Olive Oil

Alongside our wines, we have been producing our Extra Virgin Olive Oil for generations, carrying on a tradition deeply rooted in our family and in the Valpolicella territory.

Its exceptional quality begins with our historic olive trees: the oldest are over a century old, while even the youngest are now around seventy years old. A precious heritage, carefully preserved over time, whose fruit gives our olive oil its distinctive character, balance and strong sense of place.

For Villa Crine, olive oil is far more than a secondary product: it is an important part of our family’s history. Our olive groves have belonged to the family for generations, and continuing to cultivate them means preserving an agricultural tradition that has shaped the landscape of Valpolicella for centuries.

From the pomace

Grappa di Amarone

We produce Amarone Grappa in both unaged and aged versions, made exclusively from the pomace obtained from the production of our Amarone.

The choice to use only carefully selected Amarone pomace, still rich in its distinctive aromas, reflects our desire to preserve in the distillate the quality and character of the original raw material.

Distillation follows the traditional direct-fire method, a slow, artisanal process in which the pomace is gradually heated, allowing for careful selection of the finest fractions of the distillate.

The result is two distinct expressions: Grappa Bianca, vibrant, fragrant and intense, and Grappa Invecchiata, whose maturation in wood brings greater softness, complexity and aromatic depth.
